Cafe Rio Black Beans!

Best recipe I have ever made! Great for your Mexican dish!


Black Beans

2 Tbsp. Olive Oil
2 cloves Garlic, minced
1 tsp. Ground Cumin
1 can Black Beans, rinsed and drained
1 1/3 cup Tomato Juice
1 1/2 tsp. Salt
2 Tbsp. Fresh Chopped cilantro

In a nonstick skillet, cook garlic and cumin in olive oil over medium heat until you can smell it. Add beans, tomato juice, and salt. Continually stir until heated through. Just before serving stir in the cilantro.

Cafe Rio Cilantro Lime Rice!

I made this last week and it tasted amazing!!! I would have to say exactly like the rice you get at Cafe Rio! I made the whole meal!! So stay tuned for other recipes to come and get your whole Cafe Rio dish!

Cilantro Lime Rice

1 Cup uncooked Rice
1 tsp. Butter or Margarine
2 Cloves Garlic, Minced
1 tsp. Freshly Squeezed Lime Juice
1 can 15 oz. Chicken Broth
1 cup Water
1 Tbsp. Freshly Squeezed Lime Juice
2 tsp. Sugar
3 Tbsp. Fresh Chopped Cilantro

In a saucepan combine rice, butter, garlic, 1 tsp. lime, chicken broth and water. Bring this to a boil and cover and cook on low for 15-20 minutes until the rice is tender. Remove this from the heat. In a small bowl combine the lime juice, sugar and cilantro. Pour over the hot cooked rice and mix in as you fluff the rice.

3 Ingredient Green Beans!

This is so super easy and makes for a greeat side dish!




Creamy Green Beans


Ingredients:
2 cans of Green Beans
1 can of Cream of Celery Soup
1/2 cup of Sliced Almonds

Directions:
Pour the cream of celery soup in a small saucepan. Drain your green beans and pour them into the soup. Warm this for 10-15 minutes. Stir often. When it is ready pour the sliced almonds on top.

*Note: This is for a larger group so you can cut it in half if it is too much!

Easy Cheesy Broccoli!


ingredients:
2 cups of Broccoli Crowns
1 can of Cheddar Cheese Soup

directions:
Pour 1 inch of water in a saucepan and bring it to a boil. Add the broccoli and cover. Cook at low heat for 5-10 minutes until it is slightly tender. Drain and put into serving bowl. Heat 1 can of cheddar cheese soup. Pour over the broccoli and serve.

Ginger-Honey Glazed Carrots

Here is a great side dish to use for dinner!
Don't just eat plain old carrots. Give them a little sweet taste. 

ingredients:
2 cups of water
1/2 tsp. Salt
2 cups peeled baby carrots
1 Tbsp. Butter or Margarine
1 Tbsp. Honey
3/4 tsp. Ground Ginger

directions:
In a sauce pan combine your water and salt. Bring this to a boil and add your carrots. Return to a boil and reduce the heat. Simmer your carrots (covered) for 10 minutes or until they are tender. 

Drain and remove the carrots from the sauce pan. In this same pan combine your butter, honey, and ginger. Cook and stir over medium heat until the butter is melted. Stir in your carrots. Cook and stir for 2 to 3 minutes. or until the carrots are heated through and glazed.
